How to make and store tomato sauce

We wash the right amount of tomatoes with water well.
We put the tomato kernels with a small amount of boiling water, and leave them for at least ten minutes on low heat.
We remove the tomato kernels from boiling water and leave to cool.
Put the tomatoes in the electric mixer and beat them well.
Drain the previous tomato juice with a suitable colander.
We take the resulting mixture from the filtering process and put it in a pot over the fire.
When the mixture starts to boil, reduce the heat to the pot, tighten the lid and leave it for half an hour for the mixture to be concentrated.
We remove the pot from the fire and leave it aside to cool down.
We prepare dry, sterile plastic jars in which to distribute the concentrated tomato sauce and store in the freezer until needed for use.

How to use tomato sauce

Take the sauce jar out of the freezer and leave it in the refrigerator until it becomes liquid.
In a saucepan, put a tablespoon of olive oil, and then add a tablespoon of crushed garlic.
Stir garlic with oil, then add two tablespoons of chopped onion, and then stir well.
We put a tablespoon of salt and a teaspoon of black pepper and a pinch of rosemary.
Then we add the tomato juice and mix all the ingredients together, and when the mixture starts to boil, leave it on low heat until it becomes heavy.
Two tablespoons of ready-made tomato paste can be added to the previous mixture.
The previous mixture can be kept in plastic jars and put a spoonful of oil on the surface of the mixture before closing the jar.
The jars can be kept in the refrigerator for no more than a week, and they can be kept for a longer period in the freezer for up to six months.
